Marco Bellini trained at Alma Cucina in Bologna and opened Taverna at River’s Edge with his wife Giulia in 2009, on a single promise: cook only Italian, only from the region, only with the river as backdrop.
Fourteen years later, that promise still governs every plate. Seventy percent of what leaves the cucina is grown, raised, or made within ninety miles of our door — the rest is brought in by name, from the people Marco trained beside in Emilia-Romagna.
